for 4 persons
- 500g chicken
- 100 g onions
- 100 g tomatoes
- 3 tsp turmeric
- 3 tsp curcuma powder
- 1 tsp ginger paste
- 1/2 tsp garlic
- 1/2 tsp chili paste
- 4 curry leaves – it can be replaced by 1 tsp of “all spice”
- 4 tsp oil
- Thyme, parsley, salt and pepper
Heat oil in a pan and sauté the chicken pieces until golden brown, then remove.
Add the finely chopped onions, garlic and ginger then the tomatoes already pureed, the curcuma and the turmeric paste.
Stir quickly, add the curry leaves, salt and pepper and allow to simmer for 6 to 7 minutes in a covered pan.
Add chicken pieces, and 1/2 cup of water. Stir and cover with a lid and let it simmer until the chicken is cooked (20 minutes).
The turmeric will confer a golden color to your curry, if unavailable, double the amount of curcuma.
