Sausages Rougaille

Sausages Rougaille is a popular dish in Mauritius and here is the recipe!


 2Kg pork sausages

1Kg small tomatoes (pommes d’amour)

2 large chopped onions

fresh thyme

1 tablespoon tomato puree

2 tablespoon garlic and ginger paste

10 curry leaves

4 chillies (optional)

10ml sunflower oil

1 pinch of curcuma or curry powder


Brown the onions in oil and add the sausages cut in pieces, between 4 and 5 centimeters. Add the garlic and ginger paste together with the chopped tomatoes. Stir, add the thyme, the curry leaves, the curry powder or curcuma, the tomato puree, the chillies and a glass of water. Allow to simmer on a low fire for 45 minutes. If necessary add salt and pepper. Serve with rice.
