If there’s one drink everyone agrees on in Mauritius, it’s alouda. Sweet, fragrant, and colorful, it’s one of those timeless pleasures enjoyed in the shade of a market stall or on the go after school. But do you really know what hides beneath those ice cubes?

Alouda is more than just a refreshing beverage—it’s a real piece of Mauritian heritage. Inspired by Indian falooda, it has adapted to local tastes to become a street food star. Every family has its own recipe, every vendor their own twist.

 

What’s in a Mauritian Alouda?

  •  Milk (fresh or evaporated, sometimes vanilla-flavored)
  • Basil seeds (called *toukmaria* in Mauritius), which swell in water
  • Translucent vermicelli
  • Rose or almond syrup
  • A generous amount of ice
  • Optionally, a scoop of vanilla ice cream for the “deluxe” version

This unique mix gives alouda its distinctive texture and comforting taste, perfect for cooling off under the Mauritian sun.

Homemade Alouda Recipe: How to Make a Mauritian Alouda

 

Not in Mauritius but craving that special taste? Here’s a quick and easy recipe to make alouda at home.

Ingredients (serves 4):

  • 500 ml milk (or unsweetened evaporated milk for extra creaminess)
  • 4 tbsp basil seeds (toukmaria)
  • 50 g agar-agar vermicelli or fine vermicelli
  • 4 tbsp rose syrup (or almond syrup, depending on your taste)
  • Plenty of ice cubes
  • (Optional) A scoop of vanilla ice cream per glass

 

👩‍🍳 Preparation:

  1. Soak the basil seeds in water for 15 to 20 minutes. Drain once they have swelled.
  2. Cook the vermicelli for a few minutes, then rinse under cold water.
  3. In each glass, add a spoonful of basil seeds, a portion of vermicelli, and a spoonful of syrup.
  4. Pour the cold milk over the top.
  5. Add the ice cubes.
  6. For an ultra-indulgent version: top with a scoop of vanilla ice cream just before serving!

 

Tips and Delicious Variations

🌱 Vegan version: Replace the milk with coconut or almond milk.
